Dijon Roasted Potatoes

6-8 medium red potatoes, unpeeled
2 Tbls Dijon mustard
4 Tbls olive oil
1 clove garlic, minced
1 tsp thyme
1 tsp rosemary
salt, to taste
pepper, to taste

Preheat oven to 450 degrees.

Cut potatoes into one inch pieces.

Whisk remainder of ingredients together in large bowl, Add potatoes and toss.

Roast in greased pan (line with foil and grease for easy clean up) for 30 minutes.
