- 2 1/2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 2 Tablespoons chia seeds (optional)
- 2 Tablespoons flax seeds (optional)
- 1/4 teaspoon salt
- 2 medium bananas (mashed)
- 2 large eggs
- 1/4 cup maple syrup
- 1 1/2 cups almond milk (or milk of choice)
- 1 teaspoon vanilla
- 1 cup blueberries (frozen or fresh)
Topping (optional)
- 1 medium banana (sliced)
- 2 Tablespoons brown sugar
- 1/4 cup chopped walnuts

- Preheat the oven to 350 degrees F.
- Mix together the rolled oats, baking powder, baking soda, cinnamon, chia seeds, flax seeds, and salt in a large mixing bowl.
- Mash the bananas in a separate bowl until smooth.
- Add in the eggs, maple syrup, almond milk, and vanilla.
- Whisk until the liquid ingredients are smooth.
- Pour the liquid ingredients into the dry ingredients and mix just until well combined.
- Add in the blueberries and mix.
- Spray a 9×9 inch or 11×7 inch casserole dish (or baking pan) with oil and pour the batter into the dish.
- Add any of the optional toppings (banana, brown sugar, walnuts, and/or extra blueberries).
- Bake for about 40-45 minutes.
