Loaded Hash Brown Breakfast Casserole

 

  • 20 ounce package frozen diced or shredded hash browns
  • 1 white or yellow onion, diced
  • 1 red bell pepper, diced
  • 1 pound ground sausage 
  • 4 ounces diced green chiles 
  • 10 large eggs
  • 2 cups half and half
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

INSTRUCTIONS
  • Preheat oven to 350 degrees F and lightly grease a 9x13 pan.
  • Add frozen hashbrowns, onion, bell pepper, ham (or cooked sausage), and green chiles directly in the 9x13 pan and toss together.
  • In a large mixing bowl, whisk eggs. Pour in half and half and season with salt and pepper and whisk to combine. Stir in shredded cheese.
  • Pour egg mixture on top of hashbrown mixture in the prepared pan.
  • Cover the pan with aluminum foil and bake in the preheated oven for 45-60 minutes until eggs are set.

Hot Fudge Sauce

 

  • 1/2 cup salted butter
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup milk chocolate chips
  • 2 cups granulated sugar
  • 12 ounce can evaporated milk
  • 1 teaspoon vanilla extract

INSTRUCTIONS
  • In a medium saucepan combine butter, cocoa powder, chocolate chips, sugar, and evaporated milk. Stir to combine over medium-low heat.
  • Increase heat to medium-high and bring to a boil. Immediately reduce heat to low and continue simmering for 7 minutes, stirring constantly.
  • Remove from heat and add vanilla.
  • Pour the mixture into a blender and blend the mixture for 2 whole minutes.
  • Serve immediately or pour into a heat safe airtight container to store.

Sheet Pan Sausage & Veggies

 

  • 12-16 ounces Smoked Turkey or Chicken Sausage 
  • 2 cups sweet potato, diced into 1/2" cubes 
  • 2 cups broccoli florets
  • 1 cup bell pepper, chopped 
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning 
  • ½ teaspoon salt
  • ½ teaspoon black pepper

  • Pre-heat oven to 400F.
  • Slice the sausage into 1'' rounds. Dice the sweet potatoes into small 1/2'' cubes.
  • Add the sausage, veggies and minced garlic to a large baking sheet. Drizzle with olive oil and sprinkle with the Italian spices or your favorite spice blend. Seasoning with salt and pepper. Toss veggies with your hands until they are fully combined and coated with olive oil and spices.
  • Bake for 20 minutes, flipping halfway.

Garlic Butter Oven Baked Tilapia

 

  • 4 tilapia fillets
  • Salt and freshly ground black pepper, to taste
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • ¼ teaspoon lemon zest
  • 1 lemon, sliced into rounds, for garnish
  • Red pepper flakes, for garnish
  • Chopped fresh parsley, for garnish
  • Lemon slices, for garnish

Instructions 

  • Preheat oven to 400°F. Season tilapia with salt, pepper, paprika, thyme, and oregano; arrange fish in a 9x13 baking dish.
  • In a mixing bowl, whisk together melted butter, garlic, lemon juice, and lemon zest; pour over tilapia.
  • Bake tilapia for 10 to 12 minutes, or until fish flakes and is fork-tender.
  • Garnish with pepper flakes, parsley, and lemon slices. Serve.

Easy Blender Pancakes (gluten free!)

 

  • 2 cups old fashioned oats
  • 1 cup unsweetened vanilla almond milk
  • 1 ripe medium banana
  • 1 large egg
  • 1 egg white
  • 2 tablespoons pure maple syrup
  • 1 1/2 teaspoons pure vanilla extract
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

  • Place the oats, milk, banana, egg, egg white, maple syrup, vanilla extract, baking powder, cinnamon, and salt in a blender. Blend until smooth, about 30 to 60 seconds.
  • Heat a griddle or large skillet over medium-high heat. Grease with nonstick cooking spray.
  • Pour about ⅓ cup of the pancake batter onto the hot griddle or skillet. Cook until small bubbles form all across the top of the pancakes, about 3 minutes, then flip and continue to cook until golden brown. Repeat with remaining batter.

Perfect Chocolate Chip Cookies

 

Ingredients

  • 3/4 c. unsalted butter, softened
  • 3/4 c. brown sugar
  • 1/2 c. white sugar
  • 1 egg
  • 3/4 tsp. vanilla extract
  • 2 c. flour
  • 3/4 tsp. salt
  • 3/4 tsp. baking soda
  • 2 c. chocolate chips
  • flaked sea salt for topping

Instructions

  1. Cream butter and sugars in stand mixer for 2-3 minutes.

  2. Add egg and vanilla and keep beating for 1 min.

  3. Meanwhile in a separate bowl mix flour, salt, and baking soda.

  4. Slowly add dry mixture to wet mixture and cream. Then add the chocolate chips and mix quickly until incorporated.

  5. Scoop dough onto parchment lined cookie sheet. 

  6. Freeze cookie sheet with dough on it for 30 minutes or longer, until dough is hard.

  7. Remove dough from freezer. Line a cookie sheet with parchment paper or a silicon baking mat. Place frozen balls on it, evenly spaced (8-12 per sheet works great). 

  8. Bake in preheated 385 degrees for 7-9 minutes, until tops are lightly browning. Because the dough was frozen the tops may look rounded (top is brown, inside is still gooey). Once tops are light brown, remove from oven and transfer pan to top of stove to cool. If you desire a flatter looking cookie, flatten the top of the cookie lightly with the back of a flat spatula.

    Let cool on cookie sheet for 10 minutes before eating or transferring.

    *If the tops of your cookies aren't browning enough, you can bake at 390 or 400°F. Once tops and edges are browned (and inside is still gooey), they are done.

  9. Once removed from oven, top with flaked sea salt.
