This is more like an oatmeal cake, but who ever said it's bad to eat oatmeal cake for breakfast? It has oats and applesauce (and sugar....), and when topped with fruit and milk, it sounds even healthier! You can add fruit to the batter before baking it, or put it on afterwards. You can have it with milk poured over the top, or you can skip the milk and just eat it. Very versatile. :) I made it last summer, and had it with blueberries, rasberries, and milk. De.Licious.
6 cups oatmeal, (I prefer quick, but you can use old-fashioned)
1 1/2 cups brown sugar
1/2 cup oil
1/2 cup applesauce
2 cups milk
4 beaten eggs
1 tsp vanilla extract
1 Tbls baking powder
2 tsp salt
Preheat the oven to 350 degrees. Mix all ingredients together and pour into a greased 9X13-inch baking pan. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Serve with milk and/or fresh fruit.
