Green Enchilada Sauce

I thought to go along with Heather's Cafe Rio recipes I would add one of my favorites. This sauce is a knockoff of Cafe Rio's Green Sauce. Yum!!

2-3 T Extra Virgin Olive Oil
1 Large onion Minced
5-6 Cloves Garlic, minced or pressed
2 Green Bell Peppers, chopped
1-2 Jalapenos, seeded and membranes removed if desired
1 1/2 Lbs. Tomatillos, husked and quartered
1/2 bunch Cilantro, coarsly chopped
1 1/2 t Salt
1/4 t Black Pepper
1 1/2 t Cumin
4 cups Chicken Broth
2-3 T Sugar (to taste)

In a large saucepan, heat oil over medium heat. Saute Onions and garlic until tender and fragrant.

While onions are sauteing, combin tomatillos, green peppers, jalapeno peppers and cilantro in your Blender. Process until smooth (may need to add some chicken broth to make blendable).

Pour tomatillo mixture over onions and garlic and add chicken broth, salt, pepper and cumin. Simmer 15 minutes - 1 hour depending on the consistancy you want.

Serve over tacos, use as and enchilada sauce, inside burritos or as a dip for chips. Makes a large batch. Freezes well
