Pork Barbacoa

I found a blog that has recipes that taste similar to what Cafe Rio serves for their pork barbacoa salad. I made the salad one night when we had dinner guests, and they raved about it. I was quite pleased with how they turned out, and I love knowing I can have Cafe Rio-esque pork barbacoa salads or burritos whenever I want! (I also posted a recipe for the cilantro lime rice and black beans. The combination of the pork and the rice is great!)

** Don't be scared by the addition of Coke to the pork. I was at first, but it works fantastically!

Pork Roast: Put it in a crock pot with a little water and cook until very tender (about 8 hours on low).

Shred pork and add:

1 can enchilada sauce
2 cloves minced garlic
1 small can diced green chilies
1 can Coke (not diet coke)
1 cup brown sugar
salt to taste

Cook for one more hour.
